Recipe below: 10 - 15 Little Red and Golden Potatoes OR 4 to 5 large golden potatoes Panko bread crumbs 1 Sweet Onion 1 Tablespoon Minced Garlic 1 pound ground lamb 2 cups frozen mixed vegetables (peas, carrots, corn, green beans) Accent Adobo Seasoning 2 Tablespoon Irish butter Splash Worcestershire Sauce Splash Cooking Sherry 3 Tablespoon cornstarch Red Cooking Wine (optional) Butter/I can't believe it's not butter Heavy Cream, Half n Half, or Milk Preheat oven to 400 Get potatoes boiling high in pot, I leave skins on. Chop onion and add minced garlic. Cook on medium until garlic is brown and onions are starting to turn brown. Add lamb to pan along with butter. Turn to low and slowly cook. Prep your pie pan. Spray with cooking spray. Add panko breadcrumbs until bottom is well coated. Turn lamb back to medium and add Worcestershire sauce, sherry, and cornstarch. Mix until well blended, turn back to low, and cook 5 minutes. Heat your frozen mixed veggies in microwave for 2 minutes and add to lamb. Take off heat once timer goes off. After 20 to 30 mins, your potatoes should be fork tender. Chop and mash with fork although can use masher. Add 3 spoonfuls of butter or I can't believe it's not butter. Well blend before adding a bit of heavy cream, half in half, or milk. Mix until smooth. If still lumps, slowly add more liquid. You can also use a hand blender. Assemble pie with lamb and veggie mixture and add potato on top. Do a crisscross pattern on top. Bake for 30 to 35 minutes. Top will be golden brown, the raised potato with be dark brown. The potato with be crispy on top, soft underneath, lamb with be moist and tender with a sweet and savory flavor, and panko breadcrumbs will be slightly crispy and light. Thanks for watching!
